Instructions
Prepare the peppers: Slice off the tops of the bell peppers and remove the seeds and ribs. Optionally, trim the bottoms to help them stand upright.
Cook the meat: In a skillet over medium heat, cook the ground meat until browned, breaking it apart with a spoon. If using additional vegetables, sauté them with the meat until softened.
Prepare the filling: Add the cooked rice or quinoa, garlic powder, onion powder, cumin, salt, and pepper to the skillet. Stir in 1 cup of cheese and mix everything together. Taste and adjust seasoning as needed.
Stuff the peppers: Spoon the stuffing mixture into each pepper, pressing down gently to pack it in. Top with the remaining cheese.
