Ingredients
  

  • 1 lb medium or large shrimp peeled and deveined
  • 1 tablespoon olive oil for shrimp
  • 1 teaspoon lime juice freshly squeezed
  • 1 tablespoon fajita seasoning store-bought or homemade
  • Salt and pepper to taste
  • 1 large bell pepper sliced thinly
  • 1 medium onion sliced thinly
  • 1 tablespoon olive oil for vegetables
  • 1 teaspoon fajita seasoning for vegetables
  • Salt and pepper to taste
  • 4 small flour tortillas or corn tortillas, if preferred
  • Optional toppings: sour cream guacamole, salsa, shredded cheese, chopped cilantro, lime wedges

Instructions
 

  • Marinate the Shrimp: In a bowl, combine the shrimp with 1 tablespoon of olive oil, lime juice, fajita seasoning, salt, and pepper. Toss to coat the shrimp evenly, then let it marinate for at least 15 minutes (up to 30 minutes if you have the time).
  • Prepare the Vegetables: While the shrimp marinates, slice the bell pepper and onion into thin strips. Toss the vegetables with 1 tablespoon of olive oil, 1 teaspoon of fajita seasoning, and salt and pepper. Set aside.
  • Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for a few minutes.
  • Air Fry the Shrimp and Vegetables:
  • Place the marinated shrimp and vegetables in the air fryer basket in a single layer (you may need to cook in batches if your air fryer is small).
  • Cook the shrimp for 6-8 minutes, shaking the basket halfway through. The shrimp should turn pink and opaque when done.
  • Cook the vegetables for 8-10 minutes, shaking halfway through until they are tender and lightly charred.
  • Assemble the Fajitas: Warm the tortillas in the microwave or on a skillet. Spoon the cooked shrimp and vegetables into each tortilla and add your desired toppings such as sour cream, guacamole, salsa, and cilantro.
  • Serve: Enjoy your shrimp fajitas immediately, garnished with lime wedges and extra toppings.

Notes

  • Shrimp Size: The recipe uses medium to large shrimp, but you can adjust the cooking time if you use smaller or larger shrimp.
  • Make Ahead: You can prepare the shrimp and vegetables ahead of time and store them in the fridge for up to 2 hours before cooking. Just be sure to let them marinate for at least 15 minutes for full flavor.
  • Tortilla Options: While flour tortillas are typically used for fajitas, you can also use corn tortillas if you prefer a gluten-free option.
  • Vegetable Variations: Feel free to add or swap other vegetables like zucchini or mushrooms for a more varied flavor profile.
