Equipment

  • Air Fryer – 1 unit
  • Cooking spray or oil (1-2 sprays)
  • Knife or pizza cutter (1 unit)

Ingredients

  • 2 flour tortillas medium size
  • 1 ½ cups shredded cheese cheddar, mozzarella, or your choice
  • 1 cup cooked chicken beef, or vegetables (optional)
  • 1-2 tablespoons salsa optional, for dipping
  • Seasonings optional: cumin, garlic powder, chili powder

Instructions

  • Prepare the Fillings: Lay the tortillas flat on a clean surface.
If using chicken, beef, or veggies, ensure they’re cooked and cut into small pieces.
  • Assemble the Quesadillas: Place a generous amount of cheese on one tortilla.
Add your desired fillings on top of the cheese, then place the second tortilla on top.
Press down gently to secure the tortillas together.
  • Preheat the Air Fryer: Set the air fryer to 375°F (190°C) and preheat for about 3-5 minutes.
  • Cook the Quesadillas: Lightly spray the air fryer basket with cooking spray or oil. Place the assembled quesadilla inside, making sure it doesn’t overlap.
Cook for 5-7 minutes, flipping halfway through, until both sides are golden and crispy.
  • Slice and Serve: Once cooked, remove the quesadilla from the air fryer and let it cool for a minute before slicing into wedges.
Serve with salsa, sour cream, or guacamole if desired.

Notes

  • Tortilla Type: You can use corn tortillas if preferred, though they may not get as crispy as flour tortillas.
  • Fillings: Feel free to get creative with your fillings! Consider adding grilled vegetables, bacon, or even breakfast-style fillings like scrambled eggs and sausage.
  • Crispiness: If you prefer extra crispy quesadillas, spray a little more oil on the tortilla before cooking.
  • Storage: Leftover quesadillas can be stored in an airtight container for up to 2 days. Reheat in the air fryer for 3-4 minutes to bring back the crispiness.
