Air Fryer Mexican Pizza is a quick and flavorful twist on the classic Mexican dish, combining crispy tortillas with seasoned meat, refried beans, salsa, and melted cheese, all cooked to perfection in an air fryer. This recipe is perfect for busy weeknights or when you're craving a fast yet delicious meal. Ingredients
  

  • 2 units Flour tortillas
  • 1 lb 450g Ground beef or chicken
  • 1 cup 240g Refried beans
  • 1/2 cup 120g Salsa
  • 1 1/2 cups 180g Shredded cheese (cheddar or mozzarella)
  • 1 packet 30g Taco seasoning
  • Optional toppings: Sour cream jalapeños, cilantro, guacamole

Instructions
 

  • Prepare the meat: In a skillet, cook the ground beef or chicken over medium heat until browned. Drain any excess fat. Add taco seasoning and a splash of water to coat the meat, simmer for a few minutes.
  • Prepare the tortillas: Spread refried beans on one side of each tortilla, then layer with a spoonful of salsa.
  • Assemble the pizza: Place a tortilla on top of the salsa. Layer with the seasoned meat, then top with shredded cheese.
  • Preheat the air fryer: Set your air fryer to 375°F (190°C) and preheat for a couple of minutes.
  • Cook the pizza: Place the assembled pizza in the air fryer basket and cook for 6-8 minutes or until the cheese is melted, and the crust is crispy and golden.
  • Serve: Remove the pizza from the air fryer. Top with any additional toppings such as sour cream, jalapeños, or fresh cilantro. Slice and serve immediately.

Notes

  • Air fryer size: Depending on the size of your air fryer, you may need to cut the tortilla in half or make a smaller pizza to fit properly in the basket.
  • Vegetarian option: Replace the meat with black beans or grilled veggies for a vegetarian-friendly version.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2-3 days. To reheat, simply place the pizza back in the air fryer for 3-5 minutes.
  • Adjust the spice: Use mild or spicy salsa based on your heat preference, or add extra spices like chili powder or cumin for a bolder flavor.
