Ingredients
  

  • 1 lb 450g Shrimp (peeled and deveined, tails on)
  • 2 tbsp 30 ml Olive Oil
  • 2 cloves Garlic minced
  • Juice of 1 lemon
  • 3 tbsp 45g Greek Yogurt (full-fat)
  • 1 tsp 1g Dried Oregano
  • 1 tsp 1g Dried Thyme
  • ½ tsp 2g Salt
  • ¼ tsp 1g Black Pepper
  • Wooden or Metal Skewers 4-6

Instructions
 

Prepare the Shrimp

  • Peel and devein the shrimp if they’re not already prepared.
    Leave the tails on for a decorative touch, or remove them for easier eating.

Make the Marinade

  • In a mixing bowl, combine olive oil, minced garlic, lemon juice, Greek yogurt, oregano, thyme, salt, and pepper.
    Whisk the ingredients together until smooth and well combined.

Marinate the Shrimp

  • Add the shrimp to the bowl with the marinade and toss them to ensure each shrimp is coated evenly.
    Cover the bowl and refrigerate for 30 minutes to 2 hours for optimal flavor.

Prepare the Skewers

  • Thread the marinated shrimp onto the skewers, making sure they are arranged in a single layer.
    If you’re using wooden skewers, be sure to soak them in water for 30 minutes before use to prevent burning.

Preheat the Air Fryer

  • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

Cook the Shrimp

  • Place the shrimp skewers in the air fryer basket, ensuring they aren’t overcrowded.
    Cook at 375°F (190°C) for 8-10 minutes, flipping the skewers halfway through. The shrimp should be pink, opaque, and firm to the touch when done.

Serve

  • Remove the skewers from the air fryer and let them rest for a minute. Serve with tzatziki, a Greek salad, or pita bread for a full meal.
    Garnish with fresh parsley or a squeeze of lemon.

Notes

  • Shrimp Size: If you use smaller shrimp, reduce the cooking time slightly to avoid overcooking.
  • Air Fryer Variations: Cooking times may vary slightly depending on the make and model of your air fryer. Check the shrimp halfway through and adjust if needed.
  • Veggie Add-ins: Feel free to add bell peppers, onions, or cherry tomatoes to the skewers. These can be threaded between the shrimp and will cook beautifully in the air fryer.
  • Marinating: Marinate the shrimp for at least 30 minutes, but no longer than 2 hours to avoid them becoming too soft from the yogurt.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the air fryer for 2-3 minutes at 350°F (175°C).
