Ingredients
  

  • 2 Pita Bread or 4 sheets of phyllo dough
  • 1 Medium Cucumber peeled and diced
  • 1 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion thinly sliced
  • 1/4 cup Kalamata Olives sliced
  • 1/3 cup Feta Cheese crumbled or cubed
  • 2 tbsp Olive Oil for drizzling and brushing
  • 1 tsp Oregano dried
  • Salt and Pepper to taste

Instructions
 

Prepare the Cup Base:

  • Cut the pita bread into quarters (or, if using phyllo dough, layer 2-3 sheets and cut into smaller pieces).
    Brush lightly with olive oil and press each piece into a muffin tin, shaping them into cup forms.

Air Fry the Cups:

  • Preheat the air fryer to 350°F (175°C). Place the pita or phyllo dough cups into the air fryer basket in a single layer.
    Air fry for 4-6 minutes, or until they are golden brown and crispy.

Prepare the Salad Filling:

  • While the cups are cooling, chop the cucumber, tomatoes, red onion, and Kalamata olives. Cube or crumble the feta cheese.
    Toss the vegetables and feta in a mixing bowl, then drizzle with olive oil, and sprinkle with oregano, salt, and pepper.

Assemble the Cups:

  • Once the cups are cooled, fill each one generously with the prepared Greek salad mixture.

Serve:
