Air Fryer Enchiladas are a quick and healthier twist on a classic Mexican dish.
Using the air fryer, you get a crispy tortilla exterior while keeping the filling tender and cheesy.
This recipe allows for endless customization, from chicken to beef or vegetarian fillings, making it a versatile meal option.
It's perfect for busy weeknights or when you're craving something flavorful and easy to prepare.

Equipment

  • Air Fryer: 1 (any size, preferably with a basket)
  • Small skillet or pan: 1 (for cooking protein, if needed)
  • Tongs: 1 (for handling enchiladas)
  • Cutting board and knife: 1 (for chopping ingredients like onions, bell peppers, etc.)
  • Measuring spoons: 1 set (for seasoning)
  • Baking brush or spoon: 1 (for spreading sauce)

Ingredients
  

  • Tortillas – 8 small flour or corn tortillas
  • Shredded Chicken – 2 cups or substitute with ground beef, black beans, or sautéed vegetables
  • Enchilada Sauce – 1 1/2 cups red or green, depending on preference
  • Shredded Cheese – 2 cups cheddar, Monterey Jack, or a blend
  • Taco Seasoning – 1 tablespoon for seasoning chicken or beef, optional
  • Olive Oil Spray – as needed for lightly coating tortillas to prevent sticking

Instructions
 

  • Prepare the Filling: If you're using chicken, cook and shred it, seasoning it with taco seasoning or your preferred spices.
    If using ground beef, brown it in a skillet and mix in seasoning.
    For vegetarian fillings, sauté vegetables like onions, peppers, and zucchini with some spices for flavor.
  • Assemble the Enchiladas: Lay out the tortillas and spoon a generous amount of your filling into the center of each.
    Roll the tortillas tightly and place them seam-side down in the air fryer basket.
  • Add Sauce and Cheese: Lightly drizzle or brush the enchiladas with enchilada sauce.
    Sprinkle the shredded cheese generously over the top of each enchilada.
  • Air Fry the Enchiladas: Preheat the air fryer to 360°F (180°C) for 3 minutes.
    Then, air fry the enchiladas in a single layer at 360°F for about 10-15 minutes, checking halfway to ensure even cooking.
    Once crispy and golden, remove them from the air fryer.
  • Serve: Top the enchiladas with additional enchilada sauce, sour cream, guacamole, or fresh cilantro as desired.
    Serve hot with your favorite sides.

Notes

  • Protein Variations: Use shredded rotisserie chicken, ground beef, black beans, or sautéed vegetables for different fillings. Each protein will bring a unique flavor and texture to the dish.
  • Cheese: Feel free to adjust the type of cheese you use depending on your preferences. A combination of cheddar and Monterey Jack is great for meltiness.
  • Freezing Tip: You can assemble these enchiladas ahead of time and freeze them before air frying. Just thaw them in the fridge overnight and air fry them as instructed.
  • Gluten-Free Option: Use gluten-free tortillas and ensure your enchilada sauce is also gluten-free for a safe gluten-free meal.
  • For Extra Crispiness: If you prefer even more crispy edges, lightly spray the tortillas with olive oil before rolling them up and air frying.
