Equipment

Ingredients
  

  • 12 mushrooms large, white button or cremini
  • 1/2 pound chorizo crumbled or sliced
  • 1/4 cup grated cheddar cheese optional, for extra flavor
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Fresh parsley for garnish
  • Salt and pepper to taste

Instructions
 

Prepare the Mushrooms:

  • Clean the mushrooms using a damp cloth or paper towel.
  • Remove the stems gently using a small spoon to create space for the stuffing.

Cook the Chorizo:

  • Heat a skillet over medium heat and add the crumbled chorizo.
  • Cook for 5–7 minutes until browned and crispy, stirring occasionally.
  • Drain any excess fat, then set the chorizo aside to cool slightly.

Stuff the Mushrooms:

  • Spoon the cooked chorizo into each mushroom cap, pressing it in gently but not overstuffing.
  • If desired, sprinkle some grated cheese on top of each stuffed mushroom.

Air Fry the Mushrooms:

  • Preheat the air fryer to 375°F (190°C).
  • Arrange the stuffed mushrooms in a single layer in the air fryer basket, ensuring they aren't overcrowded.
  • Air fry for 8–10 minutes, until the mushroom caps are tender and the stuffing is golden brown.
  • Check halfway through to ensure even cooking.

Serve:

  • Garnish the stuffed mushrooms with fresh parsley and serve immediately.

Notes

  • Chorizo: Make sure to drain any excess fat from the chorizo to prevent the mushrooms from becoming soggy.
