Air Fryer Chicken Taquitos are a crispy, flavorful snack or meal made with a simple filling of shredded chicken, cheese, and seasonings, all wrapped in soft tortillas.
With the help of an air fryer, these taquitos cook quickly with minimal oil, giving you the crispy texture you crave without the mess of deep-frying.

Ingredients
  

  • 2 cups shredded chicken about 1 medium chicken breast or rotisserie chicken
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese or Monterey Jack
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 small flour tortillas or corn tortillas
  • Cooking spray or oil for greasing

Instructions
 

  • Prepare the Chicken Filling: In a mixing bowl, add the shredded chicken.
    Stir in the softened cream cheese and shredded cheddar cheese.
    Season with garlic powder, cumin, chili powder, salt, and black pepper.
    Mix everything well until the chicken is evenly coated in the creamy, cheesy filling.
  • Assemble the Taquitos: Warm the tortillas slightly in the microwave or on a skillet to make them more pliable.
    Place 2 tablespoons of the chicken mixture onto the center of each tortilla.
    Roll tightly to form taquitos, securing the ends with a toothpick if needed.
  • Air Fry the Taquitos: Preheat the air fryer to 375°F (190°C).
    Lightly spray the taquitos with cooking spray or brush them with oil to ensure they become crispy.
    Arrange the taquitos in the air fryer basket in a single layer, leaving space between each one.
    Air fry for 7-10 minutes, flipping halfway through, until the taquitos are golden brown and crispy.
  • Serve: Remove the taquitos from the air fryer and allow them to cool slightly before serving.
    Serve with your favorite dipping sauces like guacamole, salsa, or sour cream

Notes

  • Tortilla Type: Flour tortillas are easier to roll and typically give the best results, but you can also use corn tortillas for a gluten-free option. Make sure to warm them up first to prevent cracking.
  • Customizations: Feel free to add chopped onions, jalapeños, or cilantro to the filling for extra flavor.
  • Make Ahead: You can prepare the taquitos ahead of time and store them in the fridge for a few hours before air frying. For longer storage, freeze the assembled taquitos and air fry directly from frozen.
