Ingredients
  

  • 1 pint cherry tomatoes halved
  • 1 cup ricotta cheese
  • ¼ cup fresh spinach finely chopped
  • 2 tbsp fresh basil finely chopped
  • 1 tbsp chives finely chopped
  • 1 baguette or artisan country bread sliced ½ inch thick (8–10 slices)
  • 2 –3 tbsp olive oil
  • 1 –2 garlic cloves peeled and whole
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Prepare the Cherry Tomatoes: Wash the cherry tomatoes thoroughly under cold running water to remove any dirt or residue.
    Once cleaned, place them on a cutting board and slice each tomato in half using a sharp chef’s knife.
    Transfer the halved tomatoes to a small bowl, then season generously with salt and freshly cracked black pepper.
    Toss gently to ensure every tomato half is evenly coated.
    Set the seasoned tomatoes aside to allow the flavors to mingle while you prepare the other ingredients.
  • Make the Herbed Ricotta Mixture: In a clean small mixing bowl, add the ricotta cheese.
    Finely chop the fresh spinach leaves and basil, then add them to the ricotta along with the snipped chives.
    Using a spoon or spatula, mix everything thoroughly until the herbs are evenly distributed throughout the cheese, creating a creamy, fragrant mixture.
    Taste and adjust seasoning with a pinch of salt and pepper if needed.
    This mixture will provide a rich, flavorful base for your bruschetta.
  • Toast the Bread Slices: Take your sliced baguette or artisan bread and arrange the slices on a baking sheet.
    You can toast them in a toaster, under the oven broiler, or on a preheated grill.
    Toast each slice until it develops a golden-brown color and a slightly crispy texture, which will provide the perfect base for the toppings.
    Be careful not to over-toast, as you want the bread to remain slightly soft inside while crisp on the outside.
  • Infuse Garlic Flavor: Once the bread slices are toasted, peel your garlic cloves if you haven’t already.
    Take a whole clove and rub it vigorously across the top surface of each warm toast.
    The rough texture of the bread will help scrape small amounts of garlic, releasing a subtle, aromatic flavor.
    Adjust the amount of rubbing according to your personal taste—more for a bolder garlic punch, or less for a mild undertone.
  • Brush with Olive Oil: After rubbing with garlic, lightly drizzle or brush 2–3 tablespoons of extra virgin olive oil across the top of the toast slices.
    This adds richness, helps keep the bread moist, and enhances the overall flavor of the bruschetta.
    Be careful not to overdo it; just enough to coat each slice lightly is perfect.
  • Assemble the Bruschetta: Now it’s time to layer the toppings.
    Take a spoonful of the herbed ricotta mixture and spread it evenly over the surface of each toasted slice.
    Next, carefully arrange the halved cherry tomatoes on top of the ricotta, ensuring each toast gets a generous amount of tomatoes for both flavor and visual appeal.
    Sprinkle a little extra salt and pepper over the tomatoes to heighten their natural sweetness and balance the flavors.
  • Garnish and Finish: For a final touch, sprinkle additional finely chopped chives and basil over the top of each slice.
    This not only enhances the flavor but also makes the bruschetta visually appealing.
    Optionally, you can drizzle a tiny bit more olive oil for a glossy finish.
  • Serve Immediately: Bruschetta is best served fresh while the toast is still slightly warm and crispy.
    Arrange the slices on a serving platter and enjoy as a light appetizer, snack, or accompaniment to your favorite Mediterranean-inspired meal.
    If desired, pair with a crisp white wine or sparkling water for a refreshing combination.
